According to childbirth educator Amy Haas, writing in “Bidwifery” magazine, pregnant women should eat at least three servings of vegetables each day — two servings of green and one serving of yellow vegetables. Zucchini and most types of squash are low in calories, fat and cholesterol, high in moisture content and full of beneficial nutrients, making them an excellent choice for pregnant women.
Thai Zucchini Noodles With Pork And Broccoli
Zucchini belongs to the summer squash family. It’s often recommended as a good choice for pregnant women to meet their green vegetable needs, according to Haas. Zucchini contains folate, potassium and vitamins A and C. Choose zucchini with smooth skin and dark green; wash well but don’t remove the skin because that’s where most of the benefits are. Half a cup of raw zucchini contains only 13 calories; the same amount of cooked zucchini contains only 18 calories.
Winter squash varieties are also recommended for pregnant women; mostly meet the requirement for yellow vegetables. Acorn squash is a common winter squash, and its nutritional value differs from others in this category. It contains very little fat or sodium, no cholesterol and is an excellent source of dietary fiber. Winter squash contains vitamins A and C, along with iron and calcium, all of which are key elements in the nutritional needs of pregnant women.
This healthy vegetable can be eaten fresh after washing well. Chop and eat raw or mix into a fresh salad. They can also be baked or grilled. Remove the seeds before eating the pumpkin. If you choose roasted or baked squash, avoid heavy seasonings and sauces: the former can cause heartburn, and the latter can significantly increase the calorie count of this low-calorie vegetable.
